Cast Iron Skillets heat up slowly and cool down slowly, but they also retain heat exceptionally well. To ensure the skillet is heated properly before cooking, heat it for about 5 minutes on medium heat. You can test if the skillet has reached the desired temperature by adding a few drops of water to the surface. If the drops are bouncing and condensing, the skillet has reached sufficient heat.

 

Since Cast Iron Skillets can reach high temperatures and retain heat well, they may produce more smoke compared to other materials. However, this is not a cause for concern as long as you keep the time short between adding oil and food. This way, you can prevent the oil from burning and fuming.

 

When cooking meat, it's best to heat the skillet well before adding the meat to seal it properly. Seal each side of the meat for 2-3 minutes, depending on your preference. Cast Iron Skillets are the most effective cooking utensils for sealing meat.
